In recent years there has been an influx of innovation for developing compelling plant-based versions of ground beef and, to a lesser extent, pork and chicken. But there has been little in the way of publicly-announced R&D or commercial efforts to develop the next generation of tasty and affordable plant-based turkey products. Deli slices and seasonal holiday roasts are available from a few brands, but there is room for more innovation toward different formats and more complex products with higher fidelity to conventional turkey.
